Peas and Crayons

This past week on Thursday I got my wisdom teeth out. That meant I was out of commission for working for my Dad. I got The Paleo Kitchen for my birthday and had yet to try out any recipes so this week was the time to whip up some recipes. I tried the Fluffly Blueberry Pancakes & the Cinnamon Chocolate Swirl Banana Bread.

Fluffy Blueberry Pancakes

I made these pancakes one morning for breakfast for my family. We fell in love! I do have to admit that they were not 100% Paleo because I had to use whole wheat flour since we didn’t have tapioca flour.

Regardless, these “almost” Paleo pancakes tasted just like a fluffy batch of whole wheat pancakes. These have coconut flour in them and y’all know my battles with coconut flour and honestly I still loved them. Y’all definitely have to try this recipe out!

Cinnamon Chocolate Swirl Banana Bread

Later that afternoon I got a little bored and decided to try the next recipe on my “to-try” list. Once again coconut flour was a starring ingredient. I had all the other ingredients on hand at home so this is a true Paleo treat!

WIAW Cinnamon Chocolate Swirl Banana Bread

I love this Banana Bread. I think it may take some slight getting used to, but I’ve been eating it all week and enjoy it even more every time. It’s dense and moist and full of banana flavor with some chocolate swirled in. My mom and sister also loved this bread so I’ll be making it again!

I’ve been enjoying a slice topped with some cookie butter. It may not be the healthiest way to eat it, but it sure as heck tastes good.WIAW slice Cinnamon Chocolate Swirl Banana Bread

Salsa Verde Chicken Enchiladas

For my last meal before heading back to college on Sunday my mom made me some enchiladas for lunch. Evidently these are in no way Paleo. My mom found the recipe off Pinterest. Enchiladas is one of my favorite meals and I always request some while I’m at home.

My Mom used some Green Chile sauce that was evidently quite chunky and made the enchiladas pretty hot. She made flat enchiladas instead of rolled so there was another stack of tortillas that we got into before I remembered to take a picture.WIAW Green Chile Chicken Enchiladas

While eating these I was wishing my wisdom teeth were already healed because I would have eaten a lot more than I did! I think this is a recipe that we’ll be coming back to!

That’s all I’m going to include for today. I’m starting student teaching this week so lunch has been pretty boring as in peanut butter and honey sandwiches and carrots. Which is delicious if you ask me.

WIAW #2 Continent Pancakes

Hello everyone! Today I’m linking up for What I Ate Wednesday! This will cover about a span of a week and a few things I’ve eaten during that time.

As I sit here working on this blog post I’m eating my protein pancakes that look like I was trying to create pancakes in the shapes of the 7 continents. Or like a mom who is trying to make dinosaur shaped pancakes for her little boys. I don’t know what went wrong in my proportions!

Despite the funky shape they still tasted delicious and filled me up this morning.

Now let’s begin:

WIAW june 4 1On the right: My Mom made some Chocolate Banana Bread with coconut and peanut butter chips. With a layer of peanut butter on top, it was a perfect breakfast choice.

On the left: I made a vanilla iced coffee protein shake. I was pretty impressed with my concoction and hopefully will share on the blog soon once I perfect it.

On the right: We had spaghetti last night for dinner and my Mom made homemade spaghetti sauce.

On the left: I had been dying to have pizza, so we made homemade pizza one night. One pizza had pepperoni and green chile. The other pizza had olives and….a bunch of other vegetables that I did not take any part in.

WIAW june 4 3On the right: Sunday mornings usually mean we put something quick and savory in the oven for breakfast. A popular choice is cinnamon rolls. I haven’t had a cinnamon in awhile so I really enjoyed it. Of course I used the cream cheese frosting, but peanut butter really can go on about anything.

On the left: We have a little baby skillet that can cook eggs just like the one above. It’s the perfect size for making an egg for a biscuit or English muffin.

WIAW June 4 4On the right: We had cauliflower rice for lunch with a stir fry of chicken, broccoli, and peppers. Cauliflower rice is surprisingly good. As long as you don’t think about it not being actual grainy rice, you wouldn’t notice much of a difference.

On the left: Salmon patties with peas and mac & cheese! I’m typically not a huge macaroni person, but every now and then some mac & cheese can make my day.

5 On Friday: I Don’t Want to Taco ‘Bout It

1. Fitness. My workouts this week have been pretty good. On Monday in weight lifting I did this workout from PbFingers. I did 3 sets of 15 for each superset before moving on to the next one. I’ll be honest. I didn’t have time to add in all of the abs, but the arms/shoulder part ended up being more challenging than I thought!

Tuesday afternoon I took advantage of a nice day and went to the outdoor track on campus. I did 4x200m sprints with a 200m walk and 1x100m sprint. Then I just ran for about 10 minutes and did some abs/core work after that.


Wednesday was leg day in weight lifting class. Thursday I went for a nice 3 mile run and followed that with some abs. Trying to get a good plank picture makes the time go by a little faster and still that’s not even a great picture haha.


Today I was really lame and did about a 12 minute cardio workout, but I’m glad I at least did something because staying in bed was really tempting!

2. Food. This week my breakfast schedule has gotten a little more exciting. On Thursday I had some extra time before I had to go to class, so after my run I made protein pancakes!! I haven’t had protein pancakes for breakfast during the week in a longgg time!


Today I knew I didn’t want to have oatmeal for breakfast and wanted to have something with spinach. I decided to do scrambled eggs with spinach and had a banana with peanut butter on the side. It was pretty satisfying, but trying to eat my eggs with hot sauce and then eating my banana with peanut butter was a weird taste transition.


Now that it’s gettting warmer where I go to school, I’m getting hooked back on iced coffee. Thankfully my bank account is pretty low this week, so I’ve been taking advantage of the Starbucks gift cards I have. Today on my way to work I got a vanilla iced coffee.


3. Finding the light. There’s something about being into photography that has made me really sensitive to lighting. Especially natural lighting. The drive I have to make to my Thursday class takes me through a valley of Pecan orchards, alfalfa fields, and wheat fields. New Mexico seriously has the best sunsets and on my way home even though I was super hungry I had to stop and take advantage of the beautiful light outside. It’s capturing beautiful moments like this that really fuels my passion for photography.


4. Free.  I saw this on my Pinterest and it really resonated with me. I’ve always been someone who hates the feeling of being chained down and burdened. Of course nobody likes that, but it stresses me out and really causes restlessness in my soul. Eventually you have to find an escape from that and though you may escape bits and pieces of it may still remain leaving a bit of heaviness. This just reminds me that I need to truly let all of that go. Whether you share my beliefs or not I believe this is something that anyone can relate to. My God is one who offers me a life of freedom, and I’m so happy that in Him I’m am not chained down. “And you will know the truth, and the truth will set you free.” John 8:32
