Post-Thanksgiving ’13 Recap & Fall Confessions Part 2

  •  Thanksgiving was great. I am so very blessed and I could make a list about what all I’m thankful for, but I think we’re all over that stuff. I’m not going to bore you with a picture from Thanksgiving dinner  because well I think none of us want to even think about Thanksgiving until next July. But I did make some delicious pumpkin cupcakes with cream cheese frosting. I got the recipe from Sally’s Baking Addiction: My Favorite Pumpkin Cupcakes


  •  For my photojournalism class I have an assignment due next week for our final, so I’ve getting getting up and going out in the mornings with my Dad. I love taking pictures at home and I hope these turn out good. Here’s just a couple for funsies.

  •  Have you every had hot chocolate coffee?! I just put a few scoops of hot chocolate in the bottom of my coffee cup and mix it up. It’s delicious and a great alternative if you are trying to avoid creamer!


  • Isn’t eating at a place that is only in your hometown the best when you haven’t had it in months. Ahhh I love Taco Box. Someone used to tell me that only people who are born and raised here think it’s great and love it. Well I don’t care if that’s true or not. I love a good beef soft taco, cheesesticks, and I even splurged with a vanilla Dr. Pepper.
  • photo(9) I’ll be honest. Be home on break and trying to keep with your workout routine and normal eating is really hard. I have an upcoming trip where I want to look really good, but working out was just not consistent this week. I think I’ve worked out 3 or 4 times maybe…My body is also just bloated…and blah. Thanksgiving and eating all this good food at home just slows it down. Next week I’ll definitely be working on detoxing, debloating, and getting back into my workout routine. Of course pizza after a big lunch at Taco Box definitely doesn’t help, but hey it’s break.


Now I just want to get out the last of my fall confessions.

  1. I really don’t want to go back to school for the last two weeks. In my head I’ve been referring to next week as “hell week.” If I make it through next week then the I’ll be golden.
  2. I gave up eating dairy. Yes. Pretend the picture of the pizza and the cupcakes with cream cheese don’t exist. But for about a solid month I’ve really stuck to eating no dairy. That means I’ve been using almond milk, no Greek Yogurt, my coffee consumption has become almost non-existent. Why? Because of my complexion/acne. My chiropractor and my dermatologist both said that I need to cut it to an absolute minimum. Trust me I didn’t want to give it up, but for my skin I did.
  3. This big trip I’ve been referring to is my trip with my girlfriends right after finals to Las Vegas. That trip has been my main source of motivation for the semester.
  4. Last but not least…I don’t even want to put it on here, but it’s a pretty big and life altering event, but I’m no longer with my boyfriend from former posts. Someday when I’ve had more time to reflect on it and whatnot maybe I’ll post something about it, but for now I’m just doing the single life. I haven’t been this happy or relieved in a long time, so don’t worry about me.

On a more lighter note I love Jimmy Fallon. Yes, Jimmy Fallon is my new boyfriend. Wait? You haven’t heard? I wonder why. Anyways, he cracks me up and he’s so good at what he does.

Playing Catch Up on Thanksgiving Break

So break has been really nice so far. I’ve just been locked up in the house due to all the snow we got on Saturday. There’s my Dad running around on the tractor and clearing our driveway.


One of my favorite things about being home on break is my mom cooking breakfast. Breakfast is my favorite meal of the day, so any day that starts out with a cooked breakfast is bound to be a good one.

Sunday morning my Mom cooked scrambled eggs, sausage, and biscuits. Typically I’m not a huge sausage person, but the sausage we got from this pig has been so delicious. If I’m gladly eating one or two pieces of sausage then you know it must be good stuff.


My gorgeous cousin Sage turned 15 that day, so we all went over to their house for a family birthday party. Both my sister and I and our two cousins still have family birthday parties. It’s just what we do.


My Aunt made a delicious chocolate cake. As you all probably know chocolate cake is my favorite dessert. It was soooo good!!

Monday morning my Mom’s school got cancelled so we started our day off with some whole wheat pancakes from this site: They turned out really good, but you definitely had to have a topping on them.

DSC_0811The rest of Monday we just sat at home and I tried to work on some projects due next week. I made adequate progress. Then my sister drug me from my homework to go play basketball with my cousins. Instead of playing basketball I learned how to ride a ripstik! It took awhile, but now I kind of have the hang of it! I counted all the basketball and balancing as my workout for the day haha.


Now let’s get to some confessions. They really aren’t confessions, but just points of notice since I last blogged:

  • Since the time change it’s been light enough outside when I get up for me to go for a run. I love running in the morning and am so glad it’s made an appearance back in my life. Except this week…running outside is just not happening here.
  • Along with that it’s cold enough in the morning that I’ve had to break out my running tights. Disregard my cluttered room haha IMG_1818
  • As a secondary education major that means I have to do practicum hours in a classroom. This semester I’m in a really nice high school with a teacher who I’ve taken an English class from. Anyways, I’m in her class two days a week in the morning and usually when second period hits my stomach starts to rumble. This rumbling isn’t quiet or something you can disregard. So multiple times I get to go to the teachers lounge to go make some tea. It’s awesome and definitely helps quiet my stomach.
    She always offers me a bagel and peanut butter too! I haven’t taken her up on that one yet and I only have one more week left. Next week I might have to do that…
  • I got initiated into Order of Omega which is like an honor society for Greeks and is a pretty big deal. Along with that my time on the exec board of my sorority is over 😦 this semester has flown by!!IMG_1813

I’ve lived a pretty exciting life as you can tell. My next confessions post will be a bit more heavier with some real confessions! Anyways, my mom, sister, and I are off to Amarillo to do a little Christmas shopping!!

Hallelujah It’s Thanksgiving Break!

On Friday after I got out of class at 10:30 I sped home and packed the rest of my stuff to come home for Thanksgiving break! My sister left around 11 am and got home around 4:30 pm.

Luckily we left when we did because about an 1 1/2 hours away from home the roads got really icy and my sister had to drive slow the whole way home. We passed probably 7 or 8 wrecks. Not even exaggerating. Thankfully we made it home with no issues.

I know I have a ton of things to catch up with on my blog. That’s one of my goals for this week over break!

Anyways, I woke up this lovely Saturday morning to the sound of icy snow grazing against my window so I went back to sleep. Then I woke up again around 9: 30am. I grabbed a cup of coffee with pumpkin spice creamer and sat on the couch and watched TV with my parents.

Eventually my mom made pumpkin pancakes from this site minus the chocolate chips:

Surprisingly they tasted better with just butter on them. You could really taste the pumpkin flavor and they were light and fluffy. Of course I had to have one with peanut butter just because that’s what I do.

I have an insane amount of homework to get done this week while on break. When I say insane I mean insane. Most of my projects for finals are due the week we get back from break so I want to have them done.

I was going to include some awesome photos from my iphone, but I decided to click okay on the iPhone software update and I still have 3 hours to go. Awesome. But at least I’m at home with my family where there’s some football on TV, a fire in the fireplace, and snow falling outside. And I’m getting to blog which hasn’t happen in quite a while evidently. So I’d say this is a perfect way to spend a Saturday night at home.

I did do the following workout today:

I found it on Pinterest and it was a pretty good workout! I’ll definitely consider doing it again and it took me close to 25 minutes due to the way I used my breaks (about 1 minute in between).

So I’ll just type up my little “To-Do” list for Thanksgiving Break!

  • My crap ton of homework
  • Catch up on blogging and on my favorite blogs!
  • Workout 5 days a week ( I have an upcoming trip to prepare for!)
  • Plan out my wardrobe for my upcoming trip (details later!)
  • Try to make healthy eating choices when I can, but indulge when I should.
  • Make my Christmas List
  • Catch up with my friends from home
  • Prepare my transition manual for the new secretary on my sorority’s executive board
  • Organize all of my pictures

Last but not least I bet this song came on the radio at least 5 times yesterday and I never changed the station. In love with it.
